  • 2 tbsp green tea powder

  • ¾ cup whipped heavy cream

  • ¾ cup milk

  • 2/3 cup granulated sugar

  • 3 egg yolks


  • Stir 2 tbsp of granulated sugar into a bowl of green tea powder and set aside.

  • Take the egg yolks in a separate bowl, empty the residual sugar in it and whisk the mixture thoroughly.

  • Warm the milk in a deep-bottomed pan, paying attention to keep it from boiling.

  • Ladle a small amount of this warm milk into the sweetened green tea mixture and stir them all together into a smooth and uniform paste.

  • Add the paste to the rest of the warm milk in the pan along with the whisked egg.

  • Stir the mixture and heat it over slow flame, taking extra care to prevent it from boiling.

  • When the mixture thickens and coats the spoon, turn off the heat and let it cool to room temperature.

  • Stir in the whipped cream into the mixture and pour the ice cream mixture into a large vessel.

  • Let it chill in the refrigerator for a couple of hours before putting it in the freezer.

  • When the ice cream freezes completely, take it out and break the ice crystals with a wooden spatula.

  • Stir the ice cream mixture briskly and put it back in the freezer.

  • Continue this process at least thrice or until the ice cream turns smooth and creamy.

  • Return the ice cream for the final time and let it set for an hour.

  • Scoop out green tea ice cream into serving bowls and enjoy it on hot summer days.

Camellia Sinensis and Green Tea

Green tea is a beverage made from the leaves of the Camellia sinensis plant. This plant is native to Asia, particularly the East, South, and Southeast regions, but the use of this tea plant has grown so much that it’s cultivated in many parts of the world. From the time it is planted, it takes approximately three years for a tea plant to produce leaves that can be harvested for the making of tea. The process of each tea variety begins with plucking the youngest leaf buds and leaves from the plant.
